Hotels and Restaurants are service industries and by nature rely on the level of competence and motivation of their staff, individually and as a whole. Aside from a few automated theme restaurants the rest of us are at the daily mercy of individual performance...whether it is the maid not folding the toilet paper correctly or the waiter not filling the peppermill or the apprentice not washing the salad, the operation is in the hands of the lowest common denominator.

My father, a Maitre Cuisinier of the old school,  used to tell me that "there is no job so simple that it can not be screwed up". 

In the true spirit of yin and yang the individual performance is also our greatest asset .. the trick is to create strategies and operations where the individuals performance can shine at the top end of the spectrum while maintaining the lower end of the spectrum at an acceptable level for the particular operation. When we fall below this acceptable level then the restaurant industry is famous for abusing the individual rather than tracing the error back to the source and fixing the system.

 

A good operation starts with a good strategy, then builds solid and sound systems that allow the individuals to perform at their highest levels ... the simple equation of ...  

better systems =  better work environment =  better the individual can ( and will ) perform
